Shorshe Ilish : Ilish or Hilsa is a fish that itself created a genera of cooking in Bangla cuisine.Hilsa(Tenualosa ilisha) has been honoured as the National Fish of Bangladesh and is extremely popular in Eastern India.This fish is rich in Omega 3 fatty acid and is best harvested in monsoon when they migrate to the upstream from the sea.there are number of ways of cooking Hilsa.here I have prepared a recipe that comes from Bengal called Shorshe Ilish( Mustard gravy). method: make a fine paste of yellow or black mustard seeds along with 3-4 green chillies and a pinch of salt. now place the pieces of fish on a large non stick kadai or pan and put the mustard paste+ mustard oil+ red chilly powder+ turmeric powder + salt and mix them evenly on to every pieces of fish .Now leave it for sometime.Now switch on the flame and cook for 5 mins and add approximately 2 cups of water and cook for further 10-12 mins.Now add beaten yogurt along with grated coconut or readymade coconut powder or coconut milk mixed together and leave it on medium flame till the gravy thickens .switch off the flame and serve with steamed rice .In my platter the small portion of green vegetable shown is methi -baigan-alu ki bhaji ..:) Happy cooking !!!!
