Since Its Football Time In Tennessee, We thought we would share a few easy appetizer recipes that are popular here at the inn. Bacon Wrapped Pineapples and Stuffed Shrimp. Enjoy and GO VOLS!! Bacon Wrapped Pineapples Ingredients: 1 Fresh Pineapple 1 Pound of Bacon (not all will be used) 1 Box of Brown Sugar (Not all will be used) Remove the outside skin and core of one pineapple Cut the pineapple into 1 inch cubes Wrap the pineapple cubes in your favorite bacon(We use Bentons or Applewood Smoked Bacon because the smoke flavor ascents the Pineapple Place the wrapped Pineapple evenly spaced onto a baking sheet pan that is lined with parchment paper Top each piece of wrapped Pineapple with Brown Sugar and bake at 350 for 20 to 40 minutes or until Bacon is cooked to your liking. Stuffed Shrimp Ingredients: 24 Jumbo shrimp (Peeled, De veined, and Butterflied) 50 Ritz Crackers 1 Roll 1/2 cup of Parsley 1/4 cup of butter 3 1/2 tbsp of lemon juice 3 tbsp of Parmesan cheese 2 1/2 tbsp of mayo 3 1/2 tsp of garlic 1/2 tsp of old bay Method of Production: Pulse cracker, bread and parsley in food processor just to blend a little, chunks are okay. Place butterfly shrimp on a baking sheet Melt butter in a sauce pan and cook garlic until tender and aromatic Add all dry ingredients and mix together Add lemon juice and mayo (Mix Well) Once everything is combined remove from heat and distribute evenly onto butterfly shrimp Bake on 350 for 15 mins
