Since it is the First Day of Fall, I am sharing my mothers famous Zucchini Bread recipe that is so good with a cup of coffee in front of the fireplace. Zucchini Bread Peel and grate 1 large Zucchini squash ( 2 cups) set a side 3 eggs 2 cups sugar 1 cup oil 2 cups graded Zucchini squash 3 teaspoons vanilla IN SEPARATE BOWL 3 cups flour 1/4 teaspoon baking powder 3 teaspoons cinnamon 1 teaspoon baking soda 1 teaspoon salt 2/3 cups nuts Beat eggs until foamy. Add next 4 ingredients. Mix lightly, add flour mixture and nuts. Bake in two large or three small loaf pans at 325 for 1 hour 15 minutes.
