Since the cook book is slow in coming I thought I would put a few easy recites on the site for the holidays. Hope you enjoy. Chef Bill Vrazel Vrazel’s Crabmeat Au Gratin 1 lb. crabmeat ( if you really want to impress use Jumbo Lump) 1 1/2 cups cooked medium diced onions (sauté in 6 ounces butter) 1 quart half-n- half 6 oz. flour 3 egg yolks 6 oz. butter salt & pepper to taste 6 oz. parmesan cheese Melt butter and flour on medium heat, stirring for five minutes, but do not brown. Add half-n-half and bring to just a simmer. Turn heat off. Place egg yokes in a bowl and add three to four ounces of hot cream sauce and mix well. Repeat this step with three to four more ounces of cream sauce. Now add this to the remaining cream sauce and blend well. Adjust seasoning to taste with salt and pepper. Mix in onion and crabmeat. Place in a casserole dish and top with parmesan cheese. Bake in 375 degree oven until lightly browned and bubbly. Serves 4 to 6 people. Vrazel’s Oyster Dressing 2 pints stewing ( or small oysters) oysters with broth 12 oz. butter 1 cup finely sliced green onions 2 1/2 pints of fresh, course, fresh French bread crumbs (make in Food processor) salt and pepper to taste Place butter in saucepan and melt over medium-high heat. Add oysters and cook until edges start to curl or about half cooked. Remove from heat and add half the of bread crumbs. Add small amounts of remaining until soggy with no liquid showing. You may need more or less bread crumbs depending on the amount of liquid that needs to be absorbed. Place soggy dressing into baking pan and bake in 350 degree oven until browned. At this point, the dressing should have a moist consistency. Let sit 10 min before serving Serves 6 to 8 people. Spinach Touffle` 6 oz. cream cheese 10 oz. frozen chopped spinach (keep liquid) salt & pepper to taste 4 oz. butter 1 cups bread crumbs Parmesan cheese Melt butter and cream cheese whip together until blended. Add chopped spinach (uncooked) and season with salt and pepper mix well. Add bread crumbs until soggy and place in casserole dish. Top with parmesan cheese and bake at 350° for 15 minutes. Serves 4 to 6 people.
