Since we have a new rooster, my hens are happy and laying like crazy. I have purchased sandwich rounds, and will make ahead breakfast sandwiches to have in the freezer for the week to come. Eggs scrambled with parsley and Mrs. Dash, a little milk, and into a sheet pan thats been buttered. Baked at 270*F until the eggs are set. Then I can cut into sandwich sized squares, and add some cheese, and a sausage patty that Ive baked in the oven on a baking rack inside a baking sheet at 350*F. A little work now, and then breakfast in just a few minutes when we need it. Ill be grinding flour today, Im out of soft wheat and will go ahead and fill up the hard wheat and cornmeal while Im at it.
