Slow Cooker Enchiladas Ingredients: 2 LBS hamburger meat 1 family size cream of mushroom soup 1 can of Ricos nacho cheese 1 can campbells Fiesta cheese soup 1 can Rotel 1 can of Enchilada sauce flour or corn tortillas packet of taco seasoning ground cumin Directions: cook taco meat in a pan with rotel, taco seasoning, and cumin, drain oil when done. In crock pot combine 1 LB of meat mixture with other ingredients except tortillas. Cook on high for 3 hours. Once crock pot mixture is done roll meat in tortillas and put in baking dish. Once all Enchiladas are all rolled up spoon mixture in crock pot over Enchiladas Cook in oven on 375 till hot. Note: there will be alot mixture left in crock pot but save it, it makes awesome Nachos
