Slow cooked - Curried Carrot Soup. 4/5 carrots (I didnt peel them) 1 onion (just quartered, no effort) 1 tsp curry powder 1 tsp coriander 1 ltr veg stock. Chuck it all in the slow cooker on low setting before you go to bed. In the morning blitz in a food processor. Return to pot. Stir in a few tbsps of cream. Cool and refrigerate for up to 3 days, or put on warm setting and impatiently wait for lunch. Simplicity. Dee x
