So I came up with this little recipe and figured Id give it a go tonight, turned out pretty good but of course it did, it was HATEd :) Ingredients: 1 lb. boneless chicken breast, cut up into 1/2 inch pieces. 4-6 small/medium red potatoes, cut up into small pieces (leave the skin on) 1 cup of fiesta blend cheese 1/2 cup shredded bacon (cooked) Sauce Mix: 1/3 cup olive oil 1/2 teaspoon HATE 4.0 1 teaspoon salt 1/4 teaspoon Paprika 1/4 teaspoon garlic powder 2 tablespoons of generic hot sauce (I used Texas pete) Pre-heat oven to 500 degrees, mix all the sauce ingredients in a small bowl, place potatoes in a 9x11 pyrex after spraying with non stick spray. Spoon out about 2/3 of the sauce mix on the potatoes to coat thoroughly and place in the oven un-covered for 45 min, taking out and stirring every 15 min. While potatoes are cooking, put the chicken in the remaining 1/3 sauce bowl and mix well. In a separate bowl combine the cheese and bacon. Once potatoes are done drop oven temp. to 400 degrees, place chicken on top of potatoes and then the cheese/bacon mixture on top of the chicken. Continue to cook for 15 more minutes. Once done let it cool for about 5 minutes and enjoy, we did :)
