So...Ive been roasting some of the beans we make our coffee with over the past few years, getting more comfortable with the techniques...and weve gotten green beans from a few nice sources. Decided to treat each other to twenty pounds of Kauai Coffee goodness...and have only tried one of the two types. It needs less honey...it is less bitter overall than most of the coffee Ive had, Christine calls it sweet. The flavor delivery is complex and wonderful. A few days ago, I left the garage door open when it was particularly cold out...so the 22 minute roasting period didnt really finish. The beans looked under-roasted, so I ran them through another cycle...only down to 15 minutes, the lower limit of the roaster. I think Ive discovered something...because these beans grind up to show the beautiful orange of the Kauai soil and the flavors are so much smoother. Now Im stumped, because Im not sure what did this. If only I knew the outside temperature...geez. And the time I did it. Come to think of it, those beans mightve froze...although they were in the closed garage. Damnit...Im on the verge of discovering the greatest coffee-thing of my young roaster hobby...now to find a way to recreate it all. This might take some time.
