So, if we need fat when consuming Vitamin D (as well as A, E & K) foods, just what are good fats? Saturated fats such as coconut oil, butter, ghee, tallow (from beef) and lard (from pork) are protective against oxidation and inflammation. Many studies have shown that the higher the saturated fat intake in the diet leads to less fat in the bloodstream (boy, is this the opposite we have been taught since the 80s). Where as the same study showed that low fat diets where carbs were high, had higher fat in the bloodstream. Low carb/high fat. ...more to come.
