So last night I go totally spoiled by the mister. We treated ourselves to a sublimely chilled night in, indulged in a cheese board and some red wine, and he made me an amazing bean salad covered in salsa verde, which I think is my new favorite thing! So the Meat-Free Monday recipe is actually his work and not mine!!! Finley chop by hand (not a blender) a large bunch of parsley, basil, mint and coriander. Add chopped garlic (1 or 2 cloves), 3 or 4 chopped cornichons and 2 tbsps of chopped capers. Chop, chop, chop! Put the chopped mixture in a bowl and add a tbsp of dijon mustard, 4 tbsps of extra virgin olive oil, 2 tbsps of red wine vinegar, and salt and pepper. Et voila! We then added this to a bowl of mixed beans and it was the best thing Ive tasted in a while! Ive also made these amazing energy balls today which are sugar free, full of vegetarian protein and the perfect mid-afternoon pick-me-up, especially if you are working hard to ignore all those chocolates in the office/supermarket/everywhere.
