So my ABSOLUTE FAVORITE SOUP...(we seriously eat this like once a week, and its super healthy!) One and half boxes of chicken stock Chicken (sometimes we make it no chicken and use vegetable stock) Two cans of black beans, or a tri blend of blank, pinto and kidney bean Whole bushel of green onions minced (+ the white part minced, just not the roots) About a half cup of chopped cilantro One-two jalepenos chopped with no seeds (unless you want it super hot) Three-five cloves minced garlic One tablespoon cumin Twenty or so cherry tomatoes, whole Once soup is cooked and ready (I typically cook it for thirty minutes or so, I often cook the chicken on the side for longer so that it will shred, if not I will chop the cooked chicken), add diced avocados and shredded cheddar cheese. Pepper and sriacha to taste. Delicious!
