So the entries are in...just in time for you all to start Baking some fabulous Christmas Cupcakes!! Entry No1. Heres what Abhishikta Malik made for our Food Talk India Crazy Christmas Cupcake Challenge with KitchenAid India Cornbread cupcakes with crème fraiche, smoked salmon and dill A savoury twist on the traditional red-white-green Christmas colours Ingredients: For the cupcakes (makes 12) 1 cup cornmeal (Makki ka atta) 1 cup flour (Maida) 1/3 cup sugar 2 tablespoons honey 2 eggs 2 teaspoons baking powder 100 gms butter 1 cup milk ½ cup cheese (grated) 1 chilli (finely chopped) For the crème fraiche: 1 cup cream 1 tablespoon yoghurt For the topping: Smoked salmon Dill Procedure: 1. Combine cream and yoghurt. Cover with cling film and allow it to sit for 14-18 hours, until thickened with a slightly nutty tart flavour. 2. Sift all the dry ingredients together (cornmeal, flour, baking powder) three times. 3. Using the KitchenAid wire whip, beat the eggs till light and fluffy (start with speed 2 and go till the maximum speed). Combine sugar, honey and melted butter. 4. Change the attachment on KitchenAid to flat beater before adding the dry ingredients, a little at a time, and mix on speed 4 till combined. Tip in the finely chopped chilies and grated cheese for another dimension to the cupcake, and a subtle hint of spice (can be alternated with Tabasco or horseradish). Do not overmix. 5. Pour on to cupcake tray and bake in preheated oven at 180 degrees for 30 minutes. 6. Once the cornbread cupcakes are ready, allow them to cool completely. 7. Dress the cupcakes with a generous dollop of crème fraiche, a beautiful sliver of smoked salmon and a fresh sprig of dill. Notes: These cupcakes double up as gorgeous hors doeuvres at Christmas parties. Light yet luxurious, simple yet indulgent, and unusual yet so delicious! TIP: Small muffins are ideal for this recipe, so that the cornbread and the lovely topping delicately balance each other. The KitchenAid makes baking so much easier, faster and cleaner! (Total time taken including baking – 1 hour)
