So we are very pleased to show the results of the lab work we recently had done down at Clemson Univeristy, in Dr. Ducketts lab, where they specialize in Fatty Acid analysis and other meat quality lab tests. These two charts demonstrate how pasture and forest raised pork from Rock House Farm is a much better alternative to conventional pork found in the grocery stores. The first chart shows how our pork is lower in Saturated Fat, similar in Monounsaturated Fat, but much higher in Polyunsaturated Fat (Good fats that are anti inflammatory and that contribute to a healthy cholesterol metabolism) than Conventional Pork. The second chart shows two important ratios in our diet, Polyunsaturated to Saturated (P:S) and Omega 6 to Omega 3 (n6:n3). The recommended bar, shows what current health professionals suggest as the optimal ratios in our diet. As you can see, our pork is higher than the recommended level of P:S and much lower than the recommended n6:n3. In both cases, our pasture and forest raised pork is a better alternative to Conventional.
