So yesterday I went out on a culinary limb. Someone special I know celebrated their 50th b-day yesterday, and my intel (Mrs. Someone Special), advised me that he was a huge fan of the traditional Austrian dessert the Sachertorte. Its a unique dessert made of a chocolate meringue cake, baked, then split in half, filled with apricot glaze, the topd with apricot glaze, and lastly covered in chocolate icing that is cooked to the point that once its set, its fudgy in texture. While I was familiar with the dessert, I never undertook the task of creating one myself. He liked it, and said it was spot on. And since hes a former Executive Chef-CEC, Ill happily put that little feather in my cap! p.s., for all my other chef buddy perfectionists, yes - I realize the apricot is off center. Terrible time to find out your refrigerator isnt level!!! (and we wont talk about my dyslexic S)
