So, you know those mini choc chips I used in my cupcakes last night? They only have 3 ingredients! Evaporated cane juice (Rapadura), chocolate liquor (which is just ground up cacao nibs), and cocoa butter. Yay!! You can buy them here, from Organics on a Budget: organicsonabudget.au/enjoy-life-semi-sweet-chocolate-mini-chips-283g/#aid=1319 To make the muffins, I used the Grain Free Cinnamon Donut Muffins recipe in my cookbook (or you could use any plain cupcake recipe); I left out the cinnamon, added about 70g choc chips at the end (folded through with the egg whites) and topped with this icing instead of cinnamon and sugar: Chocolate Icing: Place 100g raw cashews into Thermomix bowl and mill 8 sec/speed 8. Add 20g raw cacao powder 1 tsp vanilla extract 70g pure maple syrup 30g coconut oil 30g hot water Cook 3 mins/37C/speed 5 (scraping down sides partway through if needed). These muffins are awesome, they stay moist and soft for a couple of days and freeze well!!
