Soft Pumpkin Cheese-cake Dessert Cookies Ingredients: 1 (8 oz) cream cheese, room temp softened 1/2 C butter, room temp soft 1 C sugar 1/2 C pumpkin 1 egg room temp 1/2 tsp vanilla extract 1 C flour 1 C cake flour 1/2 tsp baking powder 1/2 tsp salt 1/2 C of white baking chips 1/2 tsp pumpkin pie spice Instructions Preheat oven to 350. In a large bowl beat cream cheese and butter together until smooth and creamy. Blend in sugar, pumpkin, vanilla extract and egg until smooth. In a different bowl, combine flours, baking powder, salt, and pumpkin spice. Mix dry ingredients into wet ingredients.Fold in white baking chips. Put the dough in the refrigerator for 20 minutes. On a cookie sheet lined with parchment paper place large scoops of dough. You can use an ice cream scoop. Bake for 10-12 minutes. Let cool for 2-3 minutes before transferring to a wire cooling rack.
