Some food / wine pairing seem to have naturally evolved through regional cuisines. Think about the classic pairing of an Italian Chianti with pasta in red sauce. What wines are best wines to pair with one of my favorite cuisines, Latin American? Of course wines from the same region, which recently seem to be rising in popularity. South American wines offer great quality wines at a very reasonable price point. Argentina’s classic asado, or barbecue, is a perfect pairing for the highly tannic Malbec and Cabernet Sauvignon, two of the country’s most popular wines. Tannins, which are drying and astringent, lose their harshness when combined with the fat in a forkful of meat. Chile’s most widely produced white wine is Sauvignon Blanc, an ideal choice for Chilean sea bass and seafood stews like Pailia Marina, a classic garlicky seafood stew. Sauvignon Blanc’s mouth-watering acidity and grassy aromatics bring out the delicate flavors of fish and shellfish. Your next visit to the shop, ask for a taste of a South American wine. It will surprise you.
