Some more bread free lunch inspiration..... Rinse a couple of cups of rice (I use basmati) place in oven dish. Grate up some pumpkin or carrot and add some frozen peas or corn. Cover on liquid, I use my pre made bone broth/chicken stock to give it great flavour and all the nutritionAl goodness of bone broth. Cover and place in oven for a couple of hours. Make enough to eat for dinner as a side dish and for lunch boxes the next day! YUM!
