Some of you know that I have a small micro beerbrewery. At Maltstock-l Whiskyclub Gathering a friend. John Derks gave me a bottle of his first brew. He wanted my opinion. Time for a taste. Wow. My first brew was nothing like this. Type: Dark Ale Brewed: March 28 th Bottled: April 9 th About 6,3 % Notes: Opening the bottle I hear hear a fresh ffffffssshhh! I had a propper glass in the fridge. Took it out with the bottle 30 min before tasting. Pouring into the glass a fuzzy foam apears. Fresh smell of Malts / cereal and caramel. Its a bit hazy. Is there an amout of Wheat (tarwe) in the recipe? Taste: fresh beer. Young. Malty, nutty bitter / light sweet taste. A great balance of bitterness and sweetness. Sidestep: I let my wife have a sip. It was to bitter and not sweet enough for her. She likes Westmalle tripel and hates Orval. But for me and the most of the beer geeks this is the perfect balance. The last photo is taken after about 10 min. 3rd photo. Still an active beer. Not over CO2 active but a nice layer of foam. It is so good I think an additive is used. (Correct me if Im wrong) The after tase is long and the bitterness pushes the sweetness away. Need a second bottle. Great stuff. The beer is very young and I would love to hear what it does in time. John Derks is the name of the brewer. Great beer!
