Some of you wanted the carrot cake recipe I made for Shannon. This is essentially it. Except we arent fans of shredded coconut in my house and I subbed it with raisins instead. I also added a couple of dashes of nutmeg, and my two cups of carrots was just a little more generous as well. My kids were fighting to lick the bowl tonight. And Jimmy made that sounds like oh my goodness as his breath was stolen from him. If you know my Jimmy, you know how much joy I took in his reaction. Jeremy hasnt had any yet since hes been playing softball since the sun came up today and is still out there, but I dont expect him to like it since he is more like my dad than either would care to admit and he does not like nuts in cooked food. On a salad is fine but not in cookies, brownies, or cake... or even on his ice cream. (Seriously, I just dont get it).
