Somehow (after frying a sunny-side-up egg mid-afternoon in a liberal amount of butter) I find myself reading the comments on a Guardian column regarding the perfect method of frying an egg in cast iron. And there languishing 87 comments deep, from the culinary heart of England, I find... THIS. I consider myself a pretty decent cook. Not one of these dinner party wankers who claim oh I never use recipes, I just, you know, put what feels right in the pan , but handy in the kitchen all the same. However, even now, nothing brings me as much satisfaction as when I get a fried egg just right. Sometimes it sticks, sometimes it splits, but when you nail it you feel the shit. I (100%) concur.
