Someone woke up wanting Banana-Walnut Pancakes. So I made a batch. Recipe here but if you are in a hurry, you can use Krusteaz. I’m not gonna lie…they were pretty awesome. BANANA-WALNUT PANCAKES Makes 6-8 servings About 45 minutes for prep & cook Ingredients • 2 tablespoons brown sugar • ½ teaspoon baking soda • 1 teaspoon baking powder • ½ teaspoon salt • 1¾ cups flour • 2 large eggs • 1 cup milk • 1 cup sour cream • 2 tablespoons salad or canola oil • 1 teaspoon vanilla extract • 2 large bananas, thinly sliced and set aside • Chopped walnuts (optional) • Toppings- Maple syrup & butter, powdered sugar, more sliced banana Directions • In a medium bowl combine all the dry ingredients and whisk to combine. • In a separate bowl whisk the eggs, milk, sour cream, oil, and vanilla extract. • Pour the liquid mixture into the dry ingredients. Stir with a spoon until just combined (some lumps are ok). • Fold the sliced bananas gently into the batter. • Ladle about 1/3 cup on a hot griddle, or flat bottomed frying pan. Once there are small holes all over the pancakes, flip and cook for another 1 or 2 minutes. • Garnish with desired toppings.
