Sometimes the cut of meat is just so good you simply don’t need to do much to it….This week we are featuring our “Pork Rack Rib Roast Chop” I know it’s a mouthful …..in more ways than one. We do what is essentially a Pork Prime Rib Roast, slow roasted to absolute juicy perfection (Pork should never be dry) then we do a Double Thick cut Chop and top it with our house made Sweet onion and caramelize Pineapple Chutney( jam, sauce, Coulis, relish)….Whatever you like to call it; and finish it with the Roasted pan juices. It’s so good you could almost give up chocolate cake and milk shakes just to have some, well okay, maybe just the milk shakes, nevertheless it’s really good! Try it with a pint of our “Bootjack IPA” soooo good together. On Sunday we take our English Muffin’s and grill them to a nice golden brown(With real butter of course) and sauté a few leaves of fresh spinach, place them atop the English muffins and then place a slice of gently warmed “Nova Style” smoked salmon on each muffin then we gently place a perfectly poached fresh egg and top it all with a Ribbon of our house made Hollandaise sauce!
