Sometimes you need to bake an imperfect cake to know what makes a cake perfect :- I am sharing tips from my kitchen about my favourite cake , The Basic Victorian Sponge Cake . Well the truth is it is mighty difficult to mess up this one recipe where all you need to do is to take equal amount of flour, sugar and butter. But wait there are eggs and baking powder. So I wanted to make sour cream sponge cake last night and the recipe I followed yielded this dense horror. I am kind of obsessed so I immediately made my favourite Victorian Sponge cake just to check and well its difficult not to perfect this one recipe but here are tips which help you 1. The amount of baking powder must just be right, too much and you will have a zinc like taste and too little and your cake wont rise at all and be a dense horror 2. Cakes made with oil instead of butter is a cake indeed but not a Victorian Sponge Cake but too much of butter can lead to a dense mess again 3. Always and always sift your flour and baking powder and re sift it when folding it with the creamed butter and eggs 4. Never ever overmix the batter , it leads to a cracked top 5. The best thing you can do is use a wooden spoon to first cream the butter and then use a whisk and add your eggs one by one and then use the wooden spoon to fold in the flour 6. They are best baked at 180 C and preheating oven is a must 7. Do not follow a recipe due to the pictures, read through it and then check with some other recipes and follow your instinct with which one to follow. The recipe I had followed last night had called for more sour cream than most other recipes and my instinct told me to follow another one but in the end I followed the incorrect one and so I have two cakes now one perfect one horrible 8. If you have a dense cake , do not panic, slice it soak it with milk and create a pudding , recipe to follow soon 9. Always let the cake cool in the tin for at least 10 minutes and then move on to cool it on a rack for another 15 minutes to 30 minutes 10. Using a serrated knife gives even beautiful looking slices
