Souper easy noodle jars! ;) Ok heres a really easy and healthy(ish) lunch idea for you! I saw this idea a while ago... somewhere out there in internet land, not a vegan site though and then remembered them recently and thought Id give the idea a try. Grab a jar a put in noodles, veggies and some kind of protein, top with whatever sauce you want and then close up and take to work. When you want to eat, fill with hot water (not quite boiling) and leave to sit for a few minutes. Then voila, you have a really filling lunch. I made one today and it literally took me less than 5 minutes to prepare in the morning. I used small cakes of dried noodle (you can use dried wheat, or rice, or already soft noodles), a couple of thinly sliced mushrooms, some chopped bok choy, a handful of stir fry veggies (pre prepared) and some flavoured tofu. The sauce was grated ginger, tamari and chilli bean sauce. Sauce possibilities are endless. You could use miso, tom yum, sweet chilli etc. One thing I would recommend is not to completely fill the jar with water unless you want a real soupy soup, second time I made this (which I didnt photograph) I only filled the jar half way (enough to cover and soften the noodles) and it made the sauce even more concentrated and delicious.
