Spiced Applesauce Bread Ingredients: 1 1/2 cups applesauce (I use chunky applesauce in this recipe) 1 stick or 1/2 cup or 8 tablespoons butter or margarine, softened 1/2 cup brown sugar 2 eggs 1/2 cup buttermilk (could use regular milk) 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg 1/2 teaspoon allspice 1/4 teaspoon ground cloves 1/4 teaspoon salt 1/2 cup raisins (can add more if wanted) 1/2 to 1 cup nuts (I use walnuts) Directions: Cream butter and brown sugar. Add eggs, buttermilk, vanilla and applesauce. Mix with mixer. Combine flour, baking powder, baking soda, cinnamon, nutmeg, allspice, cloves and salt in a bowl. Mix well with wire whisk and add to liquid ingredients mixing together with mixer. Fold in raisins and nuts with a spoon. Pour batter into a 9 x 5 bread pan that has been sprayed with cooking spray. (I sprinkle a little brown sugar and a few nuts on top just to give it a little crunch). Bake in preheated 350 degree oven for 55-60 minutes checking for doneness as ovens vary. Let cool about 10 minutes before removing from pan. Makes 1 loaf. Enjoy! Note: I always make a small loaf for my sister because she loves it, so my loaf is a little smaller. You can make all small loaves for gifts or you can double the recipe. If you make the smaller loaves cook time will be about 10 minutes less than the larger one.
