Spinach Sponge Cake (As per me!) Ingredients: 150g of fresh spinach 3 eggs 2 tbsp flavouring* 3/4 cup castor sugar (add more if you want a sweeter cake) 1 cup light olive oil 2 cups self raising flour 1 tsp baking powder Method: 1. Pre-heat oven to Gas Mark 4. 1. Blend the spinach until it is a puree (like dark green baby food) 2. Beat the eggs & sugar together until creamy 3. Add spinach puree, oil and flavouring and mix for a couple of mins 4. Sift in the flour and baking powder and mix until combined into thick batter. 5. Pour into cake tin and bake for 45mins or until a skewer comes out clean. (1st attempt at 45mins wasnt baked, but was perfect after 60mins on second attempt but could be my oven!) *The spinach cake doest actually taste of spinach, so add any flavour you like. I used orange in my cake. The best thing is its green so young ones will like it, get a load of iron into their diet and not realise it!
