Start your Monday feeling smug and giving your belly a reason to love you- raid your cupboards for the following, and whip up some Happy HB Bircher to take to work with you tomorrow! Ingredients: 1 apple 1/2 cup of porridge oats (I prefer gluten free) handful of nuts (almonds, pecans & walnuts are my faves) 1 teaspoon of chia seeds 1 teaspoon of sesame seeds 4 generous tablespoons of yoghurt 2 glugs of almond milk (or soy, or just plain old cows milk) Easy-peasy method: 1. Chuck oats in a bowl, along with all yoghurt and milk 2. Grate 3/4 of the apple into the bowl (munch the final 1/4 as a reward to yourself) 3. Chop the nuts up into halves- chuck em in 4. Throw in the chia and sesame seeds 5. Mix! 6. Leave in the fridge overnight 7. Pack in stylish tupperware of your choice and smugly eat your deliciously creamy Happy HB Bircher at your desk tomorrow while your colleagues look on enviously Mines just gone in the fridge- enjoy yours!! xx
