Strawberry Pie from Sunday Strawberry Pie 1 carton of Cool Whip 1 pie crust- bake according to directions 1 1/2 pints strawberries-sliced 3/4 cup sugar 1 cup water plus 3 TBLS 3 heaping TBLS cornstartch 1 Tbls lemon juice red food coloring ( about 1 teaspoon) Mix sugar and cornstartch together- add 3 tbls of water and make a paste (paste will be thick and hard to mix- just keep working it until it is mixed well-may need to add a little more water - if so use it from the 1 cup) Boil 1 cup of water- add the paste , stirring and cooking until it becomes clear and thick. Remove from heat. Add lemon juice and food coloring. Stir. Let set until it cools. Add Strawberries. Spread Strawberries over the crust and top with Cool Whip. Note: This is for a regular size pie. For the picnic, I used a 9x13 pan , two pie crust , and doubled the recipe. ENJOY!
