Garlic Prawns (serves 4) 2 tbsp. coconut oil 2 tablespoons butter 4 cloves garlic, finely chopped ½ teaspoon dried chilli flakes 24 medium green (raw) prawns, peeled, tails left intact 2 teaspoons chopped flat-leaf parsley Himalayan salt Quick and easy creation: Pre-heat the pan to a medium heat. Place the oil, butter, garlic and chilli flakes into pan or on the BBQ and cook for 1 minute or until the butter melts. Reduce to a low heat. Place the prawns, parsley and a little salt into the pan and cook for 1–2 minutes each side or until the prawns are cooked through. Crisp Bean Sprout Salad (serves 4) Dressing: 1/4 cup rice wine vinegar 1/4 cup Bragg all-purpose seasoning or Tamari 2 tbsps. Organic peanut butter 1 tsp sesame oil 1 tsp fresh ginger (grated) 1 tsp crushed garlic Salad: 1 cup Chinese cabbage (thinly sliced) 1 cup red capsicum (cut into strips) 1 cup fresh bean sprouts 1 cup grated carrot 2 tbsps. shallots (chopped) 1 tsp sesame seeds Method: To prepare dressing, combine dressing ingredients, and stir well with a whisk. To prepare salad, combine all salad ingredients except the sesame seeds in a large bowl. Drizzle with dressing, tossing gently to coat. Sprinkle with sesame seeds. Have these ready to go while Dad takes charge of his BBQ cooking his favourite steak or fish.
