Struggling to find time to eat a proper breakfast before heading out the door to work, uni or drop the kids to school? Try preparing something the night before so that it is ready and waiting for you in the morning. Overnight oats are a great option and can be served cold or warmed in the microwave. Base 1/3 -1/2 cup traditional rolled oats (not the ‘quick’ type) 1/3-1/2 cup low fat milk 1/3 cup low fat Greek or natural yoghurt Combine all ingredients in a bowl then place in the fridge overnight. Flavourings – the options are endless but here a few suggestions - Sliced banana and cinnamon - Fruit (apple/pear/berries/passionfruit) and 1 tbls crushed nuts and seeds - 1 tsp peanut butter and sliced banana - Vanilla and strawberries Your choice of flavouring can be mixed into or layered through the oat mixture the night before or added in the morning when you are ready to eat. ** You could also add some psyllium husks or chia seeds for extra fibre!
