Sunday Supper Cuisine: Mediterranean Smoked Salmon Croquette’s Mint Lemon Water Chocolate Coconut Balls (dessert) Recipe for: Mint Lemon Water: 2 Meyer’s Lemons, small bouquet of freshly picked mint, sparkling water, ice. Directions: Fill water pitcher with 2 bottles of sparkling water. Add freshly squeezed juice of one lemon. Use the second lemon as section garnishes to meld in the water. Crush mint leaves lightly and add to water potion, too. Add ice. Stir, then keep chilled until ready to serve with supper. Recipe for: Mediterranean Smoked Salmon Croquette’s Two 6 oz. jars of smoked wild salmon from Alaska 2 cups of homemade bread crumbs * 4 eggs Spices: Cumin (pinch), Cardamom (pinch), Caraway Seeds (two pinches), half a bouquet of Basil leaves, Cinnamon (a hair of a pinch), two cloves of fresh garlic (minced), a sprig of fresh rosemary (use this separately in the skillet with olive oil. * I make my own breadcrumbs from gluten-free breads of various flavors (raisin, rye and rice flour types of breads) that I buy specifically to make my own breadcrumbs. Cut your loaf of bread into cubes or save your bread scraps and cut them into cubes and leave them in a safe place in your kitchen or pantry to air dry on their own. The only seasoning I put on them is cracked pepper and sea salt, but anyone can tinker with spicing mixtures of their own to meet their own taste needs. Because the skillet in on a medium high heat, it won’t take long to cook both sides of the croquette’s but the end result should be that both sides of the salmon patty are a deep shade of pinkish brown.
