Sunset Sweet Potato Drop Biscuits from Beachbody Thin Kitchen Recipe Book. 1 cup mashed cooked sweet potatoes 3 Tbsp. canola oil 1 Tbsp. maple syrup 1 tsp. apple cider vinegar 1/2 tsp. sea salt 1 cup whole wheat pastry flour 2 tsp. baking powder 1 tsp. ground nutmeg Preheat oven to 400 and coat the baking sheet with non-stick spray. Combine sweet potatoes, oil, vinegar, syrup, and salt in a large bowl. Sift in flour, baking powder and nutmeg. Stir together all ingredients with a fork and add a little water, if needed, to hold dough together. Drop golf-ball-sized rounds of dough onto prepared baking sheet. Bake 15-17 minutes, or until tops are lightly browned and firm to the touch. Serving size is one biscuit. Calories 80/Fat 3.5 g/Carbs 12 g/Fiber 1 g/Protein 1 g.
