Superbowl Prep Monday! Here is another recipe to help you gear up for all of those Superbowl parties! Im going to make mine in a crock pot instead of baking the dip in the oven! You can also add artichokes or diced chicken for a heartier dip! Hot Spinach Dip Ingredients: 10 oz frozen chopped spinach, thawed and excess liquid squeezed out (or can use frozen spinach, thawed) 1/2 cup 0% Greek Yogurt 5 tbsp olive oil or fat free mayonnaise 1/3 cup Parmigiano Reggiano cheese 1/4 cup scallion, chopped 1 clove garlic, crushed (or 1/8 teaspoon garlic powder) 1 cup (4 oz) shredded fat free or part skim mozzarella cheese fresh pepper to taste Directions: Preheat the oven to 375°F. Combine all the ingredients in a medium bowl. Place in an oven-proof dish and bake at 375° for 20-25 minutes, until hot and cheese is melted. Serve right away.
