Supper tonite : Recipe from a great book by local author Vince Agro. The book is called In Graces Kitchen. Vince looks back at life in Hamilton when he was a boy ... growing up in the North End of Hamilton -- some funny, some stories that tug at your heart, and intermixed with this great story are the recipes that his Mom cooked ... I have tried a number of them now ... tonite it was Garlic Sugo (Red Tomato Garlic Ragu Sauce) ... a very easy recipe Becky Chartrand , as follows .... start with 4 or 5 garlic cloves , saute in the bottom of your pan until just starting to turn brown, next add a can of Italian San Marzano peeled tomatoes right in with the garlic , then 1/4 can of water and 3/4 can of Amarone Red Wine (I make my own so it was just in the cellar) -- add about 1/2 cup of freshly chopped Italian Parsley and your all done -- let it simmer for about 15 minutes and it will thicken just enough .... salt / pepper and being Vegan there is no cheese -- but you could add some Parmesan or some Asiago ... while the sauce is cooking ... I sauteed a small egg plant / a small zucchini/ 4 small artichokes / a couple of carrots / fresh red and yellow peppers and put them aside -- and put a pot of water on the boil -- to which was added Giovanni Fabbri Spaghetti from Italy -- cooked al dente and then put into the bowl -- put some of that beautiful Red Garlic Sugo over top and then top with those beautiful veggies ... soooooo good ... so where to get all these great products .... why Picone Fine Food in Dundas has everything you would need -- and the book ...so you can get some of these great recipes you can get at J.H.
