Sweet Onion and Grape Chutney. Great to serve with fritters or cheese its handy to have an easy chutney to have on hand and keeps for a month in the fridge. My onion chutney here is a variation of Delias sweet pepper and onion jam. Replaced the pepper with grapes ( you can add apple as well). Really easy and flexible depending on what you have. Fry chopped onions and some garlic and grapes and apple ( or red pepper if you are using pepper) - about a cup in a little bit of oil until soft and transparent. Now add sugar, cider vinegar and cider and bring to a boil. Proportions are all to taste but for 1 cup onions and grapes use about 2 tablespoon cider vinegar and 225 ml apple cider. Sugar is to taste depending on grapes, apples etc. . Bring to a boil and then reduce and simmer for at least 40 minutes till it is sticky and thick like chutney. Can add ground pepper or chilli flakes to spice it up if you wish.
