Sweet Potato Casserole with Pecans 2 baked sweet potatoes, peeled & mashed 1/3 cup white sugar 1 egg 1/8 cup skim milk 1/2 tsp vanilla extract 1/3 cup packed light brown sugar 1/3 cup chopped pecans 1/8 cup flour 1/4 cup melted butter Directions: 1. Preheat oven to 350, and grease a glass baking dish (I used a 4x4) 2. In large bowl, combine potatoes, white sugar, egg, milk, vanilla, and 1/2 of the butter. Stir together and place in dish. 2. In separate bowl, combine brown sugar, flour, butter & pecans. Stir and place on top of potatoes. This glaze will be thick and creamy, evenly smooth over top. Bake for 35 minutes Serves 6 (119g each) 1 serving: 7.4g fat / 39.6g carbs / 3.4g protein
