Swiss Chard, Onion and Swiss Chard, Onion and Cheese Frittata 1 bunch Swiss chard, roughly chopped 4 tbsp olive oil 1 small yellow onion, thinly sliced Salt and fresh ground black pepper 6 large eggs 4 cloves garlic, finely chopped 1/4 cup grated hard cheese, such as Parmesan Pinch of cayenne pepper 1. Preheat the oven to 350 degrees. In a large, heavy skillet over medium heat, warm 2 tbsp of the olive oil. Add the onion and saute until tender about 6 minutes. Add the chard, season with salt and saute until tender about 6 or 7 minutes. 2. In a large bowl, lightly beat the eggs with the garlic and cheese. Season with cayenne, salt and black pepper. Add the eggs to the vegetables in the skillet, reduce the heat to medium-low, and cook until the eggs are set around the edges, about 5 minutes. 3. Transfer the skillet to the oven and cook until set, 7 to 9 minutes longer. Let cool briefly. Cut into wedges and serve right away, or at room temperature.
