#TBT: Thinking of my Nana today and remembering her wonderful Italian cooking. I decided to make a batch of her marinara sauce and pair it with quinoa (instead of pasta) for a whole grain and higher protein content meal. Delicious! This soothed my soul just as much as my palate. I miss you wonderful lady... Quinoa Bake 1 cup uncooked quinoa, rinsed 2 cups reduced sodium broth (chicken, vegetable) or water 2 cups marinara sauce (you can use a meat sauce if desired) 2 cups (or more) fresh spinach (cut or torn into small pieces) 2 Tbsp. grated parmesan cheese (I prefer freshly grated) Shredded mozzarella or parmesan for top of bake (if desired) -Preheat oven to 350 -In saucepan, combine broth and quinoa, cook according to directions (15 minutes or until liquid is gone) -Stir in sauce, spinach and grated parmesan cheese, -Allow everything to heat through until spinach is wilted. Transfer mixture to baking dish (top with grated cheese if desired). -Bake 10-12 minutes to warm quinoa and cheese will melt and brown. Makes 5 - 1 cup servings. You can also add cooked chicken, turkey ground beef or white beans to the recipe for added protein. This freezes well! Recipe adapted from: Ginos Fine Italian Foods & Pizza
