THE INCREDIBLE EGG DILEMMA! There are hundreds, probably thousands of articles and posts about how to peel the perfect hard-boiled egg. Why? Because no matter how many of those techniques you try, the egg white still adheres to the shell. Basically, it doesn’t work every time. When I get into a project like the egg, I look for what is simple and what works EVERY TIME! The secret? Peel them as soon as they come out of the ice water bath. It’s that simple. Here is my sure fire method that WILL work every time. Joe and I like our egg yolks firm on the outside and creamy on the inside. Not runny. This method will work for just that type of hard-boiled egg. Step 1: Fill pot with enough cold water to cover the eggs by an inch. YOU MUST ALWAYS START WITH COLD WATER. Step 2: Bring to a boil. If you are using a gas burner, turn off the heat and cover the eggs for 4 minutes. If you are using an electric burner, move the pot off the heat source and cover the eggs for 4 minutes. Set a timer. Step 3: Remove the eggs and place immediately in an ice bath (ice with cold water) for 5 minutes (this time is not crucial). You are stopping the eggs from cooking any further. Step 4: The most important of all steps! Remove the shell. It will slip off every time. THE RESULT? A creamy center and a unblemished exterior! These eggs can be stored safely in the refrigerator in a seal container or zip lock baggie for 1 week. Yum!
