TIPS ON HOW TO CUT UP A WHOLE CHICKEN: Cutting up a whole chicken has never been an easy task, hence as a team we have decided to give tips on how to cut up a whole chicken: 1. With breast side down, grasp chicken by legs. Using a sharp knife, remove wing by cutting close to body of chicken through joint attaching wing to breast. Reach around bird and remove second wing. 2. With legs toward you, place chicken on back on cutting board. Grasping one leg, cut skin between thigh and body to thigh joint. 3. Lifting chicken, bend leg back until thigh joints pops. Cut around thigh joint to remove leg. Repeat on opposite side. 4. Separate thigh from drumstick by cutting through joint, removing the yellow line of fat. 5. To separate breast and back, set bird on neck end. Holding tail section, cut diagonally along rib cage to back bone. 6. Keeping knife very close to bone, cut along backbone through neck end. (Apply extra pressure as you cut through bones.) Repeat on opposite side to loosen back section completely. 7. Whole breast is ready to use as it is or may be split. To split, place breast skin side down. Make a cut through V of wishbone. Bend breast back until keel bone pops. Run thumb between meat and keel bone to loosen tissue. Pull bone from breast. 8.
