Taking advantage of the cooler weather, a good reason to have the oven on all afternoon. So for New Years, by special request from the guys, pork roast and sauerkraut -- easy fix, put it in the oven and forget it. My mother-in-law Alma taught me this one. Pork and Sauerkraut bake Pork roast or ribs 2-3 jars kraut drained salt and pepper to taste Put the roast/ribs in a large broaster, surround with kraut with water added to almost cover kraut. Season with salt and pepper. This was a 4lb loin roast, fat side up, salt, pepper and a little fajita seasoning. Kraut was drained but only 2 jars rinsed cause I dont like it too sour. Put cover on broaster and bake in 350 oven (I dont bother to preheat) for about 3 1/2 to 4 hours, then uncover to brown and slightly reduce liquid for about another 35 to 40 minutes. My guys like it with mashed potatoes, you can have it all by itself if you prefer. Use the kraut you prefer, we dont like caraway but Ive had it with on occasion. You can use a smaller roast, less kraut, doesnt matter -- its the long slow cooking that brings this one together!
