#TastyTuesday *SHARE THIS AWESOME HEALTHY SIDE DISH FOR YOUR NEXT DINNER* Garlic Sweet Potato Mash * 2 lbs (4 medium) sweet potatoes, peeled & cubed * 1 tbsp coconut oil * 3 cloves garlic, crushed * 1/2 cup unsweetened almond milk * 2 tbsp non fat plain greek yogurt * salt and fresh cracked ground pepper, to taste Boil sweet potatoes in salted water until tender, drain in a colander and set aside. In the same pot melt butter and sauté garlic until lightly golden. Return potatoes to the pot, add unsweetened almond milk and greek yogurt; mash until smooth and creamy. Adjust salt and pepper to taste.
