Terroir 2014 Symposium. By Maria. I hope you are having a cup of coffee while you read this. This past Monday May 12th, I had the opportunity to attend a Culinary Symposium in Toronto. I wish I had pictures to share with you of the incredible experience it was. I had the opportunity to listen to some of the best culinary giants in the food scene right now. Chefs like Normand Laprise, Margot Henderson, Albert Adria, Daniel Boulud and David Chang, just to name a few. The entire day was filled with talks of collaboration in the food industry, association with destination, home, sense and love of place, community, connections, terroir, origin, food in action(ethical & environmental) pleasure, sensory, experience, and how food ( or in my case coffee) is at the centre of all of that. These were great chats and for me everything kept coming back to coffee. I didnt think I could fall in love with coffee anymore than I am already...but I did...or maybe yesterday reminded me why I love coffee so much. There is so much magic in those little beans. So much goodness for our bodies, our environment and our souls in each cup. The day had so many highlights, too many to post all at once. But I have to share at least these; having Margot Henderson ask me how we brew coffee at the farm, Albert Adria tell me how he prefers coffee in a mixture of Catalan and Spanish, and discover a new crush on David Chang...Amazing I know...however, the most important thing for me was to re-awaken and elevate the beauty and romance of coffee to a whole new level, and thank the universe because I have the best job in the world!
