Thai Salmon Cakes! I was sent this recipe by a lovely client however I do not like Salmon (unfortunately!) Please try them and let me know what you think! I have altered the recipe slightly so would be interested in seeing if they hold together well. Thai Salmon Cakes Serves: 6 540g skinless fresh salmon, chopped 3 tbsp red curry paste 1 ½ tbsp fish sauce 1 egg white 1 tbsp rice crumbs ¼ cup shredded coconut 60g spring onions 1 tbsp coriander, chopped Lemon wedges for serving 1 tbsp olive oil Combine salmon, curry paste, fish sauce, egg white, rice crumbs and coconut in a food processor. Process until just combined. Transfer to a bowl, stir in the shallots and coriander. Shake mixture into patties using damp hands. Heat oil in a frying pan over medium-high heat. Cook salmon cakes in batches for 2 minutes each side or until golden and cooked through. Serve at room temeprature with lemon wedges and side salad.
