The Guardian follows MSC and Feng Sushi co-founder, Silla Bjerrum, on a journey to Denmark to discover the secrets of the masters of herring marinades. Founded in 1999, Feng Sushi is a chain of inventive sushi restaurants in London that has always promoted sustainable fish and the work of the MSC. We travelled to Denmark so she could see how sustainable herring might make it on to a sushi restaurant’s menu.
