The Saturday Special for 7/26 is Prime Grade Beef Tenderloin with Roasted Nopales Pico. Keeping it simple and regional for this one, folks. We got our hands on some gorgeous Tenderloin roasts from our buddies Kane Beef down in Corpus; were going to leave them untrimmed, tie them up, rub them with Olive Oil, and season them with coarse salt and freshly cracked black pepper. Once they go into the smoker, well get to work roasting a bunch of fresh, young Prickly Pear paddles. The tender cactus will get tossed together with EXTREMELY local Chiltepin peppers, garlic, onions, and a few other ingredients to make a tangy/crunchy/spicy Pico de Gallo. 2PM as always!
