The Slovak - American Cookbook was printed in 1952. The recipes containing yeast are for fresh yeast which is almost non-existent in most grocery stores except Western PA. ☺ Yeast comes in small or large cubes, 0.6 for small and 2 oz. for large. I called Red Star years ago because I wasnt sure how much dry yeast to use in place of fresh. They told me one envelope of dry (2-1/4 t) = 1 small cake and 3 envelopes of dry = 2 oz. fresh. This is good to know except many recipes dont call for the same amount of yeast for equal amounts of flour. This drives me nuts (short drive 😊). Im making one of the nut roll recipes from this cookbook today. For 6 cups of flour, they ask for two cakes of yeast. It doesnt say small or large cakes of yeast. So, Im not sure how many packs of dry yeast to use. If you have this cookbook or youre familiar either the two hour nut roll recipe, Im all ears. Im thinking of using two packs since my other recipe calls for two.
