The legendary Laguiole. Derived from the Spanish Navaja and the French Capauchadou. The Laguiole knife was (is) a common tool used by the French shepherds. This one I have customized to give it a western flair. The trademark Bee on the mouche has been replaced with a horseshoe and I hand engraved the bolsters with some western style scrolls. I am a bit partial to this knife as I bought it in Florence, Italy at a street market near my daughters apartment when she was attending school there for a semester. My wife, daughter and I used this knife to open wine and slice cheese and prepare other snacks as we traveled around Tuscany. Whenever I use this knife, it takes me back to a train ride we took on that trip across the countryside listening to Joe Elys version of She Never Spoke Spanish to Me. Pretty fine…. I left my boots in Italy, my soles wore out in Spain….
